Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add 3 large sliced onions and a pinch of salt. Cook, stirring frequently, for about 20-25 minutes until the onions are golden brown and caramelized.
  2. Pour in 1/2 cup of non-alcoholic white wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes until reduced.
  3. Stir in 4 cups of beef broth and 1 teaspoon of dried thyme. Bring the mixture to a simmer and let it cook for about 10 minutes. Season with salt and pepper to taste.
  4. While the soup simmers, cook 8 ounces of elbow macaroni according to package instructions until al dente. Drain and set aside.
