- 2 cups halved cherry tomatoes
- 4 cloves minced garlic
- 2 tablespoons olive oil
- Salt
- Pepper
- Pasta (spaghetti or penne, or your favorite type)
- 1 cup ricotta cheese
- 1/4 cup chopped fresh basil
- 1/2 cup grated parmesan cheese
- Extra virgin olive oil (for drizzling)
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine 2 cups of halved cherry tomatoes with 4 cloves of minced garlic. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper. Toss until everything is well coated.
- Spread the tomato and garlic mixture onto a baking sheet lined with parchment paper. Roast for 20-25 minutes, or until the tomatoes are blistered and fragrant.
- While the tomatoes roast, bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
- In a large mixing bowl, combine the drained pasta with the roasted tomatoes and garlic. Add in 1 cup of ricotta cheese and mix well. If the mixture seems dry, gradually stir in some reserved pasta water until you reach the desired consistency.
- Taste and adjust seasoning with more salt and pepper if needed. Stir in 1/4 cup of chopped fresh basil and half of the grated parmesan cheese.
- Plate the pasta and top with the remaining parmesan cheese and additional fresh basil. Drizzle with a little extra olive oil for a finishing touch.
- Serve immediately while hot, and enjoy the delightful flavors of roasted tomatoes and creamy ricotta!
