  • 2 cups halved cherry tomatoes
  • 4 cloves minced garlic
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • Pasta (spaghetti or penne, or your favorite type)
  • 1 cup ricotta cheese
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated parmesan cheese
  • Extra virgin olive oil (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine 2 cups of halved cherry tomatoes with 4 cloves of minced garlic. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper. Toss until everything is well coated.
  3. Spread the tomato and garlic mixture onto a baking sheet lined with parchment paper. Roast for 20-25 minutes, or until the tomatoes are blistered and fragrant.
  4. While the tomatoes roast, bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
  5. In a large mixing bowl, combine the drained pasta with the roasted tomatoes and garlic. Add in 1 cup of ricotta cheese and mix well. If the mixture seems dry, gradually stir in some reserved pasta water until you reach the desired consistency.
  6. Taste and adjust seasoning with more salt and pepper if needed. Stir in 1/4 cup of chopped fresh basil and half of the grated parmesan cheese.
  7. Plate the pasta and top with the remaining parmesan cheese and additional fresh basil. Drizzle with a little extra olive oil for a finishing touch.
  8. Serve immediately while hot, and enjoy the delightful flavors of roasted tomatoes and creamy ricotta!
