  • Fresh Ginger
  • Garlic
  • Low-Sodium Soy Sauce
  • Oyster Sauce
  • Sesame Oil
  • Sugar
  • Cornstarch
  • Non-Alcohol Cooking Alternative (chicken broth or rice vinegar with a pinch of sugar)
  • High Smoke Point Oil (vegetable, canola, or peanut oil)

Instructions

  1. Prepare Your Ingredients (Mise en Place): In a medium bowl, combine your thinly sliced chicken with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Toss well to coat. Set aside for at least 15 minutes while you prep everything else.
  2. Chop all your vegetables uniformly. Mince your garlic and ginger. Keep them separate or grouped by cooking time.
  3. In a small bowl, whisk together the remaining soy sauce, oyster sauce, sugar, cornstarch, sesame oil, and your non-alcohol cooking alternative. Set aside.
  4. Bring a large pot of salted water to a rolling boil. Add your lo mein noodles and cook according to package directions until al dente. Drain thoroughly, rinse with cold water, and toss with a tiny drizzle of cooking oil.
  5. Heat 1 tablespoon of cooking oil in a large wok or a spacious skillet over high heat until shimmering.
  6. Add the marinated chicken in a single layer. Cook for 2-3 minutes per side until golden brown and cooked through. Remove the chicken from the wok and set aside.
  7. Add another 1 tablespoon of cooking oil to the same hot wok. First, add the harder vegetables like shredded carrots and bell peppers. Stir-fry for 2-3 minutes.
  8. Add the shredded cabbage, snap peas, and mushrooms. Continue to stir-fry for another 2-3 minutes.
  9. Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  10. Return the cooked chicken to the wok with the vegetables. Add the cooked lo mein noodles.
  11. Pour the sauce evenly over the noodles, chicken, and vegetables. Using tongs, gently toss everything together until thoroughly coated. Cook for 1-2 minutes until the sauce thickens.
  12. Transfer your Delicious Chicken Lo Mein to serving bowls. Garnish with chopped green onions or a sprinkle of sesame seeds, if desired. Serve hot.
