Instructions

  1. Pat the tilapia fillets dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the tilapia fillets. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.
  3. In the same skillet, reduce the heat to medium. Add another tablespoon of olive oil if needed, and sauté minced garlic for about 30 seconds until fragrant, being careful not to burn it.

  5. Transfer the mixture to a blender or use an immersion blender to puree until smooth. Return the sauce to the skillet.
  6. Stir in the heavy cream and lemon juice, and simmer for a few minutes until the sauce thickens slightly. Season with salt and pepper to taste.
  7. Gently fold in the fresh spinach, allowing it to wilt into the sauce.
  8. Place the tilapia back in the skillet to coat with the sauce. Serve immediately, garnished with a sprinkle of fresh herbs if desired.
