Instructions

  1. Start by chopping the onion, carrots, and celery into small pieces. Mince the garlic and set aside.
  2. In a large pot, heat a tablespoon of olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the pot. Cook for about 5-6 minutes per side, until browned. Remove the chicken and set it aside.
  3. In the same pot, add a bit more olive oil if needed, then add the onions, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth, scraping any browned bits from the bottom of the pot.
  5. Add the browned chicken thighs back to the pot along with any juices that have collected. Bring the mixture to a gentle simmer.
  6. Cover the pot and let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender. You can easily shred the chicken at this point if you prefer smaller pieces in your soup.
  7. Once the chicken is cooked, stir in the heavy cream, fresh thyme, and parsley. Season with additional salt and pepper to taste. Let the soup simmer for another 5 minutes to blend the flavors.
