Ingredients

Scale
  • 4 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows (or 4 cups of mini marshmallows)
  • 1/2 teaspoon vanilla extract
  • Green food coloring (optional, for a festive touch)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (or vegetable oil)
  • 1215 chocolate sandwich cookies (like Oreos)
  • 1215 green M&M's or chocolate candies (for the hat's buckle)
  • 1215 squares of black fondant or black icing (for the hat band)
  • Parchment paper (for lining the baking pan)

Instructions

  1. Begin by lining a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large saucepan, melt 3 tablespoons of unsalted butter over medium heat, stirring continuously until completely melted and slightly bubbling, about 1-2 minutes.
  3. Add 1 package (10 oz) of mini marshmallows to the melted butter, stirring constantly until fully melted and smooth, approximately 3-4 minutes.
  4. Remove the saucepan from heat, and stir in 1/2 teaspoon of vanilla extract, along with a few drops of green food coloring if desired.
  5. Gradually add 4 cups of Rice Krispies cereal to the melted marshmallow mixture, stirring gently until all the cereal is evenly coated, about 2-3 minutes.
  6. Transfer the mixture to your prepared baking pan, using a spatula or dampened hands to press it down evenly and firmly, aiming for an even thickness of about 1-2 inches.
  7. Allow the Rice Krispie treats to cool at room temperature for about 30 minutes until set.
  8. While the treats are cooling, melt 1 cup of semi-sweet chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl, microwaving in 30-second intervals until smooth, about 1-1.5 minutes total.
  9. Once the treats have cooled, remove them from the pan using the parchment overhang and cut them into squares or circles, aiming for a diameter of about 3 inches.
  10. Dip the top of each Rice Krispie treat into the melted chocolate and allow excess to drip off, then place the treat chocolate-side down onto a chocolate sandwich cookie.
  11. Quickly top each hat with a green M&M or chocolate candy for the buckle, and place a square of black fondant or icing around the base for the hat band, pressing gently to secure. Allow the chocolate to harden at room temperature for about 10-15 minutes.

Keywords: Don't rush the melting process; melt the butter and marshmallows slowly over medium heat. Use fresh Rice Krispies for the best crunch, and ensure to stir the chocolate thoroughly while melting to avoid hot spots.
