Ingredients

  • Yukon Gold or red potatoes
  • Cauliflower (optional, for lower-carb option)
  • Crispy bacon
  • Turkey bacon (optional, as a substitute)
  • Steak seasoning (blend of garlic powder, onion powder, black pepper, and smoked paprika)
  • Sour cream
  • Mayonnaise
  • Greek yogurt (optional, as a substitute for sour cream)
  • Vegan mayo (optional, for dairy-free option)
  • Fresh chives
  • Green onions or shallots (optional, as a substitute for chives)
  • Shredded sharp cheddar cheese
  • Reduced-fat cheese (optional, for lighter option)

Instructions

  1. Start by washing and cutting the potatoes into bite-sized pieces. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let them cool.
  2. While the potatoes are cooling, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.
  3. In a large bowl, mix together sour cream, mayonnaise, steak seasoning, and a little salt and pepper to taste. Adjust the seasoning as necessary to suit your preference.
  4. Once the potatoes have cooled, add them to the bowl with the dressing. Gently fold in the crumbled bacon, shredded cheddar cheese, and chopped chives until everything is well coated.
  5. Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 1 hour to let the flavors meld together. If possible, chill it overnight for the best taste.
  6. When ready to serve, give the salad a good stir. You can garnish with additional chives or a sprinkle of cheese if desired. Enjoy your Steakhouse Potato Salad!
