  • Large, peeled, and deveined shrimp

  • Fresh corn off the cob or thawed frozen corn
  • Chopped tomatoes
  • Diced red onion

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, cayenne pepper, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for about 15-20 minutes.
  2. While the shrimp is marinating, chop the avocado and dice some tomatoes. In a bowl, combine the avocado, corn, chopped tomatoes, diced red onion, cilantro, lime juice, salt, and pepper. Gently mix to combine, and adjust seasoning if necessary.
  3. In a small bowl, whisk together sour cream, minced garlic, lime juice, and a pinch of salt. If you want a thinner sauce, add a little water or milk until you reach your desired consistency.
  4. Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers for easy grilling. Grill for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from the grill.
