Instructions

  1. Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin pan with paper liners or grease it well.
  2. In a medium bowl, combine 1/2 cup gluten-free all-purpose flour blend, 1/4 cup packed light brown sugar, and 1/4 cup certified gluten-free rolled oats. Cut in 1/4 cup cold unsalted butter (or vegan butter alternative) until the mixture resembles coarse crumbs. Set aside.
  3. In a large mixing bowl, whisk together 1 1/2 cups gluten-free all-purpose flour blend, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  4. In a separate medium bowl, whisk together 2 large eggs, 1/2 cup milk, 1/4 cup melted unsalted butter (or vegan butter/oil alternative), and 1 teaspoon vanilla extract until smoothly combined.
  5. Pour the wet ingredient mixture into the dry ingredient mixture. Gently mix until just combined.
  6. Fold in 1 1/2 cups pitted cherries gently.
