Ingredients

  • Cremini mushrooms (or white button mushrooms or a mix of wild mushrooms)
  • Orzo pasta
  • Yellow onion (or white onion)
  • Fresh garlic
  • Vegetable broth (low-sodium)
  • Cream cheese
  • Grated Parmesan cheese
  • Fresh thyme (or dried thyme)
  • Soy sauce (or tamari)
  • Non-alcoholic white wine alternative (optional)
  • Olive oil
  • Fresh parsley (or chives)
  • Chili flakes (optional)

Instructions

  1. Prep Your Veggies: Slice your mushrooms, finely chop your onion, and mince your garlic.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add chopped onion and cook for 3-5 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  3. Brown the Mushrooms: Add sliced mushrooms to the pot and let them sit for a few minutes to brown. Stir and cook for another 5-7 minutes until softened.
  4. Toast the Orzo: Add dry orzo pasta to the pot and stir for 1-2 minutes to toast it lightly.

  7. Finishing Touch: Once orzo is cooked, turn off the heat and stir in cream cheese until melted. Then stir in grated Parmesan until well combined.
