Instructions

  1. First, cut the boneless, skinless chicken breasts or thighs into 1-inch pieces. Mince the fresh garlic and chop any vegetables like onion, carrots, or celery. Prepare the chicken broth, heavy cream, and Parmesan cheese.
  2. In a large, oven-safe skillet or Dutch oven, heat a tablespoon of olive oil or butter over medium-high heat. Add the chicken pieces in a single layer and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add more butter if needed and reduce heat to medium. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant. Sprinkle in the all-purpose flour and cook, stirring constantly, for about 1-2 minutes to create a roux.
