Easy Creamy Crockpot Chicken & Rice: Family Favorite

This Creamy Crockpot Chicken & Rice Family Dinner is a comforting one-pot meal that’s perfect for busy weeknights. With minimal effort, you can enjoy tender chicken, fluffy rice, and a rich, creamy sauce that will please the whole family.

Ingredients

  • Boneless, Skinless Chicken Breasts or Thighs
  • Cream of Chicken Soup
  • Cream Cheese
  • Heavy Cream (Optional)
  • Long-Grain White Rice
  • Chicken Broth
  • Chopped Yellow Onion
  • Minced Garlic Cloves
  • Salt
  • Black Pepper
  • Poultry Seasoning
  • Dried Parsley
  • Paprika
  • Frozen Mixed Vegetables (peas, carrots, or corn)

Instructions

  1. If using larger chicken breasts, cut them into 1-inch chunks.
  2. In the bottom of your 6-quart or larger crockpot, place the chicken pieces. Add the chopped onion and minced garlic around and over the chicken.
  3. Pour in the can of cream of chicken soup, followed by the chicken broth. Sprinkle generously with salt, black pepper, and poultry seasoning. Give everything a gentle stir to combine.
  4. Cover your crockpot with the lid. Cook on LOW for 4-6 hours or on HIGH for 2-3 hours.
  5. Once the chicken is cooked through, carefully remove it from the crockpot onto a cutting board. Shred the chicken into bite-sized pieces and return it to the crockpot.
  6. Cut the block of cream cheese into smaller cubes and add them to the crockpot. Stir gently until the cream cheese has melted completely.
  7. Stir in the uncooked long-grain white rice along with an additional ½ cup of chicken broth or water if the sauce seems too thick.
  8. Cover the crockpot again and continue to cook on HIGH for about 30-45 minutes, or until the rice is tender.
  9. During the last 10-15 minutes of cooking, stir in the frozen mixed vegetables.
  10. Give everything one final stir, taste and adjust seasonings if needed, and serve.
