  • Monterey Jack cheese
  • Gruyère cheese
  • cream cheese
  • Ritz crackers
  • 1 egg
  • water or milk
  • fresh dill weed
  • garlic powder
  • onion powder
  • black pepper

Instructions

  1. If your puff pastry is still frozen, take it out to thaw in the fridge or on the counter until it’s pliable.
  2. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  3. Finely dice your dill pickles and blot them very dry with paper towels to remove as much moisture as possible.
  4. Grate your cheese if you haven't already.
  5. Crush your Ritz crackers into a coarse crumb.
  6. In a medium bowl, combine your grated cheese, finely diced dill pickles, fresh chopped dill weed, garlic powder, onion powder, and black pepper. Mix everything together well.
  7. Gently unfold your thawed puff pastry sheet on a lightly floured surface or directly onto your prepared baking sheet.
  8. Spread your pickle and cheese mixture evenly over the entire surface of the puff pastry, leaving about a 1/2-inch border around the edges.
  9. Starting from one of the longer sides, roll the puff pastry into a tight log and pinch the seam to seal it.
  10. Slice the log into 1-inch thick rounds and lay them flat on your prepared baking sheet.
  11. In a small bowl, whisk together one egg with a tablespoon of water or milk to create your egg wash.
  12. Lightly brush the tops and sides of each pastry bite with the egg wash.
  13. Sprinkle the crushed Ritz crackers generously over the tops of the bites and gently press the crumbs down.
  14. Transfer your baking sheet to the preheated oven and bake for 18-22 minutes, or until the pastry is puffed and golden brown.
  15. Remove the bites from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
