Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for about 10 minutes, then let it cool completely.
  4. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until well combined.
  5. Add vanilla extract and lemon juice to the cream cheese mixture.
  6. Gently fold in diced peaches and mixed berries, being careful not to overmix.
