Ingredients

  • large flour tortillas
  • corn tortillas (optional for gluten-free)
  • fresh eggs
  • flaxseed meal (for egg substitute)
  • water (for egg substitute)
  • silken tofu (for vegan option)
  • cheddar cheese
  • Monterey Jack cheese
  • bell peppers
  • onions
  • spinach
  • mushrooms (optional substitute)
  • zucchini (optional substitute)
  • seasonal vegetables (optional substitute)
  • beef sausage
  • cooked ground beef
  • turkey sausage (optional substitute)
  • black beans (optional substitute)
  • cumin
  • paprika
  • taco seasoning (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook your chosen protein until browned. Add in chopped onions and bell peppers, cooking until softened. Stir in the spinach until wilted, then season with salt, pepper, cumin, and paprika.
  3. In a bowl, whisk together the eggs and a splash of milk (or a non-dairy alternative). Pour the egg mixture into the skillet with the cooked vegetables and protein. Cook gently, stirring occasionally, until the eggs are just set.
  4. On a parchment-lined sheet pan, lay one tortilla down. Spread half of the egg mixture over the tortilla, sprinkle a generous amount of cheese on top, and cover with another tortilla. Repeat to create more layers if desired.
  5. Place the sheet pan in the preheated oven and bake for about 15-20 minutes or until the tortillas are golden and the cheese is melted.
  6. Once baked, remove the pan from the oven and let it cool for a few minutes. Using a sharp knife, slice the quesadillas into wedges and serve warm. Don’t forget your favorite toppings like salsa, avocado, or sour cream!
