Delicious Pineapple Rice Recipe – A Sweet Savory Delight!

Pineapple Rice is a tropical twist on traditional fried rice, featuring a perfect balance of sweet and savory flavors. This one-pan wonder combines fragrant jasmine rice with juicy pineapple, colorful vegetables, and hearty beef for a delightful meal.

Ingredients

  • Jasmine rice (or long-grain white, basmati, or brown rice)
  • Fresh pineapple (or canned pineapple, well-drained)
  • Bell peppers
  • Peas
  • Carrots
  • Beef (or shrimp, chicken, tofu, or omit protein for vegetarian)
  • Soy sauce
  • Garlic
  • Ginger
  • Sesame oil (or vegetable oil or canola oil)
  • Apple cider vinegar (optional)
  • Sesame seeds (optional, for garnish)
  • Chopped green onions or cilantro (for garnish)

Instructions

  1. Prepare the Rice: Start by cooking the rice according to the package instructions. If you’re using brown rice, remember it will take longer to cook. Once cooked, set it aside to cool slightly.
  2. Cook the Protein: In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add your beef and cook until browned, which should take about 5-7 minutes. Remove the beef from the pan and set aside.
  3. Sauté Vegetables: In the same skillet, add a bit more oil if necessary, then toss in minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add bell peppers, peas, and carrots, cooking until they are just tender, around 3-4 minutes.
  4. Add Pineapple: Next, stir in the pineapple. If using fresh pineapple, give it a few minutes to caramelize slightly. If you’re using canned pineapple, ensure it’s well-drained, then add it to the skillet.
  5. Combine Ingredients: Return the cooked beef to the skillet and mix everything well. Add the cooled rice, breaking up any clumps, and stir until all ingredients are evenly combined.
  6. Season: Pour in the soy sauce and a splash of apple cider vinegar (if using). Stir well to ensure the rice is evenly coated with the seasoning. Taste and adjust the seasoning if needed.
  7. Finish Cooking: Cook for an additional 3-5 minutes, stirring occasionally to prevent sticking, until the rice is heated through and slightly crispy. If desired, sprinkle sesame seeds on top just before serving.
  8. Serve: Serve your Pineapple Rice hot, garnished with chopped green onions or cilantro for an extra burst of flavor!
