  1. In a large mixing bowl, combine 2 cups of maizcorn flour and a pinch of salt.
  2. Gradually add about 1 cup of warm water, mixing with your hands until a soft dough forms. If the dough is too dry, add a little more water a tablespoon at a time.
  3. Once you have a smooth dough, divide it into equal portions, about the size of a golf ball. Cover the dough balls with a damp cloth to prevent them from drying out.
  4. Take one dough ball and flatten it between your palms to about ½ inch thick. You can use a tortilla press or a rolling pin to achieve an even thickness. Repeat with the remaining dough balls.
  5. Heat a non-stick skillet or griddle over medium heat. Cook each gordita for about 3-4 minutes on each side, or until they develop a slight golden brown color and a bit of char.
  6. If you’re adding a filling, make a small pocket in the center of each gordita while they are still warm. Stuff them with cheese, beans, or your choice of cooked ground beef. Close up the edges gently to seal the filling inside.
