Instructions

  2. Prepare the bananas: In a mixing bowl, mash about 3 ripe bananas with a fork until smooth. You should have about 1 to 1.5 cups of banana puree.
  3. Mix wet ingredients: Add 2 large eggs, 1/3 cup melted coconut oil, and 1 teaspoon vanilla extract to the mashed bananas. Mix until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together 1.5 cups of gluten-free flour blend, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and a pinch of salt.
