  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of brown sugar, and 1/2 teaspoon of salt. Mix this together until well combined.
  3. Add 1 cup of cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until it resembles coarse crumbs.
  4. Stir in 1 egg and 1 teaspoon of vanilla extract until the dough comes together. If it feels too crumbly, you can add a tablespoon of cold water at a time until it holds.
  5. In another bowl, mix together 1/2 cup of brown sugar, 1 tablespoon of cinnamon, and 1 tablespoon of flour. This will be your filling.
  6. Press half of the dough evenly into the bottom of the prepared baking dish. Make sure it's packed tightly.
  7. Sprinkle the brown sugar cinnamon filling over the dough, spreading it out evenly.
  8. Roll out the remaining dough on a floured surface and place it over the filling. Press down gently to seal the edges.
  9. Bake the bars in the preheated oven for 25-30 minutes or until the top is golden brown.
  10. Once baked, remove the bars from the oven and let them cool in the pan for about 10 minutes. Use the parchment overhang to lift them out and cool completely on a wire rack.
  11. For the icing, whisk together 1 cup of powdered sugar and 2-3 tablespoons of milk until smooth. Drizzle it over the cooled bars.
