Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine 1 and ½ cups of crushed graham crackers with ½ cup of melted unsalted butter. Stir until the crumbs are well-coated and the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then remove it from the oven and let it cool while you prepare the filling.
  4. In a large mixing bowl, beat 16 ounces of softened cream cheese until smooth and creamy.
  5. Gradually add ½ cup of granulated sugar and ½ cup of brown sugar, mixing until fully combined.
  6. Add in 1 cup of apple butter, 3 large eggs (or flax eggs for a vegan option), and 1 teaspoon of vanilla extract. Beat until the mixture is smooth and well-blended.
  7. Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
  8. To prevent cracks, consider placing a pan of water on the bottom rack of the oven while baking.
  9. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
