Ingredients

Scale
  • 8 oz. egg noodles
  • 2 tablespoons unsalted butter
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil a large pot of salted water (about 1 tablespoon of salt).
  2. Cook the egg noodles according to package instructions (7-9 minutes) until al dente, stirring occasionally.
  3. Drain the noodles and set aside, optionally drizzling with olive oil to prevent sticking.
  4. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat.
  5. Season the chicken pieces with garlic powder, onion powder, salt, and pepper.
  6. Add the seasoned chicken to the skillet in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
  7. In the same skillet, pour in 1 cup of chicken broth, scraping up any browned bits from the bottom.
  8. Reduce heat to low and stir in 1 cup of heavy cream.
  9. Gradually whisk in 1 cup of grated Parmesan cheese until melted and smooth.
  10. Taste and adjust seasoning with salt and pepper, adding red pepper flakes for a kick if desired.
  11. Return the cooked chicken to the skillet and stir to coat with the sauce.
  12. Add the drained egg noodles and gently toss until well combined.
  13. If using, add frozen peas and stir for 2-3 minutes until heated through.
  14. Adjust sauce consistency with more chicken broth or water if needed.
  15. Plate the dish in a large serving bowl or individual plates.
  16. Garnish with freshly chopped parsley.
  17. Serve immediately and enjoy!
