  • 1 packet (1 oz) taco seasoning
  • 1 cup refried beans
  • 1 cup cream cheese (softened)
  • 1 cup shredded cheddar cheese

  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup chopped green onions
  • 1/4 cup fresh cilantro (chopped, optional)
  • 1 package (12-count) mini phyllo pastry cups or tortilla chip cups
  • 1 jalapeño pepper (sliced, optional for garnish)

Instructions

  1. In a large skillet, brown 1 pound of ground beef (or turkey) over medium heat for about 5-7 minutes. Make sure to break it apart with a spatula as it cooks. You’ll know it’s done when the meat is no longer pink and has a nice sear.
  2. Once the meat is cooked, drain any excess fat, then sprinkle in 1 packet of taco seasoning. Stir in 2/3 cup of water, and let it simmer for an additional 2-3 minutes until thickened. Keep an eye on it to prevent burning!
  3. In a mixing bowl, combine 1 cup of softened cream cheese, 1 cup of refried beans, and 1 cup of sour cream. Use a hand mixer or a whisk to blend until smooth and creamy. This will create the dip base that’s rich and flavorful.
  4. Next, fold in the cooked taco meat, 1 cup of diced tomatoes, 1/2 cup of chopped green onions, and 1/2 cup of sliced black olives (if using). Mix until everything is well combined. This is where the filling gets its flavor punch!
