  • 1 cup rolled oats (old-fashioned)
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/2 to 3/4 cup chocolate chips, chopped walnuts or pecans, dried cranberries, or shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, thoroughly mash the very ripe bananas until mostly smooth with a few small lumps remaining.
  3. Add the melted unsalted butter, brown sugar, large egg, and vanilla extract to the mashed bananas and whisk until well combined and smooth.
  4. In a separate larger bowl, whisk together the rolled oats, all-purpose flour, baking soda, ground cinnamon, and salt until thoroughly combined.
  5. Pour the wet banana mixture into the bowl with the dry ingredients and mix until just combined, being careful not to overmix.
  6. If using, gently fold in the optional mix-ins until evenly distributed.
  7. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers still look slightly soft.
  9. Remove from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.
