Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Pour in the melted unsalted butter (ensure it’s not too hot).
  4. Add the packed brown sugar and mix until fully combined.
  5. Crack in the egg and add the vanilla extract; whisk until smooth and creamy.
  6. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  7. Gradually add the dry mixture to the wet ingredients, folding gently with a spatula or wooden spoon until just combined.
  8. Fold in the white chocolate chips and chopped walnuts (if using) until evenly mixed.
  9. Grease an 8×8-inch baking pan or line it with parchment paper.
  10. Pour the batter into the prepared pan, spreading it out evenly.
  11. Bake in the preheated oven for 25-30 minutes, checking for doneness with a toothpick.
  12. Once baked, let the blondies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  13. Cut the blondies into squares (about 16 squares).
  14. Optionally, dust with powdered sugar or drizzle melted white chocolate on top.
  15. Serve warm or at room temperature, perfect with vanilla ice cream or whipped cream.

Notes

  • Ensure bananas are ripe for maximum sweetness and flavor.
  • Feel free to substitute white chocolate chips with dark chocolate or omit nuts if desired.
