Ingredients

  • Wonton wrappers
  • Boneless, skinless chicken breasts or thighs
  • Soy sauce
  • Fresh ginger

  • Shredded red cabbage
  • Grated carrots
  • Thinly sliced green onions
  • Rice vinegar

Instructions

  1. Preheat the oven to 375°F (190°C) or prepare the air fryer.
  2. Lightly spray both sides of each wonton wrapper with cooking spray and drape them over the rungs of an upside-down baking rack or fold them into a taco shape in the air fryer basket.
  3. Bake for 5-7 minutes or air fry for 3-5 minutes, flipping halfway, until golden brown and crisp. Remove and let cool.
  4. Cook the diced chicken breast or thigh over medium heat until cooked through and lightly browned. Shred or finely dice the chicken.
  5. Toss the cooked chicken with a tablespoon of soy sauce, a teaspoon of grated fresh ginger, a minced garlic clove (or a quarter teaspoon of garlic powder), and a tiny splash of sesame oil.
  6. In a medium bowl, combine shredded cabbage, grated carrots, and thinly sliced green onions. For the dressing, whisk together two tablespoons of rice vinegar, a teaspoon of sugar, and half a teaspoon of sesame oil, then dress the slaw lightly.
  7. In a small bowl, combine half a cup of mayonnaise, three tablespoons of sweet chili sauce, one to two teaspoons of sriracha, a tablespoon of fresh lime juice, and half a teaspoon of soy sauce. Whisk until smooth and creamy.
  8. Assemble the tacos by taking a crispy wonton shell, adding a portion of the seasoned chicken, a dollop of creamy Asian slaw, and drizzling with the secret sauce. Finish with fresh chopped cilantro and toasted sesame seeds.
