Instructions

  1. Prepare the Beef Filling: In a large skillet, over medium-high heat, cook your ground beef until it's nicely browned. Break it up into small, even crumbles and drain off any excess grease.
  2. Sauté Aromatics: Reduce the heat to medium. Add the finely diced onion and minced garlic to the skillet with the beef. Cook for about 3-5 minutes, until the onion softens and becomes translucent and the garlic is fragrant.
  3. Build the Flavor: Stir in the ketchup, mustard, diced pickles, salt, black pepper, and smoked paprika. Mix everything together thoroughly and let it simmer gently for another 2-3 minutes. Remove from heat and let the filling cool slightly.
  4. Prepare the Pie Crusts: Unroll your store-bought pie crusts onto a lightly floured surface. Using a 4-inch round cutter, cut out circles from each pie crust.
  5. Assemble the Hand Pies: Place about 1-2 tablespoons of the cooled beef filling onto one half of each pie crust circle, leaving a small border. Sprinkle about 1 tablespoon of shredded cheese over the beef filling.
  6. Seal the Pies: Lightly moisten the edges of the pie crust with a little water. Fold the other half of the pie crust over the filling to create a half-moon shape. Press down the edges to seal and crimp with a fork.
  7. Egg Wash & Vent: Whisk one egg with a tablespoon of water or milk to create an egg wash. Brush the tops of your assembled hand pies with this egg wash and make 2-3 tiny slits on the top of each hand pie.
  8. Air Fry!: Preheat your air fryer to 375°F (190°C) for about 5 minutes. Place 2-4 hand pies in the preheated basket in a single layer and air fry for 10-14 minutes, flipping halfway through, until golden brown.
  9. Serve: Carefully remove the hot hand pies from the air fryer and let them cool on a wire rack for a few minutes before serving.
